The pizza, from the base up

A pizza topped with cherry tomatoes and micro greens at Crust & Cocktails in Akron

Quick answer

Crust & Cocktails at 1256 Weathervane Lane in Akron’s Merriman Valley makes eight pizzas: five signatures at $17, the Braised Short Rib at $18, a create-your-own at $17 and a 6-inch personal pan at $10. Each comes with a signature dipping sauce. Cauliflower crust is $5 more, vegan cheese $1.

Pizza is the centre of the menu here, and it is built in layers you can read on the page: a sauce base, cheese and toppings, a finish, and a dipping sauce on the side. This page walks through each layer so you can order the pie you want the first time.

The pizzas

The signatures sit on one of four sauces. Classic marinara is under the Margherita and the Classic Pepperoni. Basil pesto is the base of the Tuscan Chicken Pesto. A creamy white-wine base carries the Truffled Wild Mushroom, and a white-wine beurre blanc sits under the Braised Short Rib and the Ai Cetriolini.

The two marinara pizzas are the plainest place to start. The Margherita adds fresh heirloom cherry tomatoes and burrata, a drizzle of olive oil and a locally farmed micro green blend. The Classic Pepperoni puts fresh mozzarella and provolone under thinly sliced pepperoni and finishes with a drizzle of hot honey.

On the white side, the Truffled Wild Mushroom layers blended mushrooms, caramelized onions, mozzarella and parmesan, then fresh thyme, micro greens and truffle oil. The Braised Short Rib is house-braised short rib with sautéed onions, provolone and mozzarella, giardiniera relish on top and horseradish aioli with it. The Ai Cetriolini is sliced dill pickles, provolone, mozzarella and crispy smoked bacon, garnished with fresh dill.

The Tuscan Chicken Pesto mixes fresh burrata with oven roasted heirloom cherry tomatoes and grilled chicken over the basil pesto, then olive oil, balsamic glaze and micro greens on top.

Create Your Own starts from a different set of four bases: creamy white wine, classic marinara, pesto or a garlic butter base. Then choose up to three toppings from fourteen: fresh arugula, caramelized onion, marinated artichoke hearts, mozzarella, cherry tomatoes, burrata, banana peppers, ricotta, pepperoni, roasted red peppers, a mushroom blend, pickled jalapeños, sausage and red onion.

Four proteins sit on top of that list: seasoned pulled chicken, prosciutto, bacon bits and spicy chorizo. Cauliflower crust and vegan cheese are the two swaps. The menu describes the cauliflower crust only as a crust option, so ask the staff about any allergy before you order.

Every pizza comes with one signature dipping sauce, chosen from eleven: chipotle ranch, creamy ranch, jalapeño ranch, honey mustard, hot honey, classic BBQ, roasted garlic aioli, peri peri sauce, buffalo aioli, Nashville hot and cilantro lime crema.

A dipping sauce changes the crust more than the pie. Hot honey echoes the drizzle on the Classic Pepperoni, while cilantro lime crema or roasted garlic aioli are gentler company for the white-base pizzas. For one person, the 6-inch personal pan is the size to order; for a table, the signatures are the ones to split.
