Crust & Cocktails is a small Akron restaurant in Liberty Commons, seating fifty-five. The kitchen keeps the menu short on purpose — antipasti, insalata, pizzaiolo, panini and dolce — and makes it fresh with local ingredients. The bar builds craft cocktails one at a time. Find it at 1256 Weathervane Lane.
Everything about this place follows from its size. Fifty-five seats means one kitchen line, one bar, and a menu short enough that every dish gets attention. It also means the room can feel full and happy on a Wednesday, which is a better problem than a big empty dining hall.
The idea is simple and old-fashioned: make the pizza fresh, buy locally where the season allows, pour drinks that somebody actually thought about, and keep the list short enough to do all three on the same night. That is the whole plan. There is no second concept hiding behind it.
You can read the intent straight off the menu. Burrata turns up in three places because it is worth it. The meatballs are blended beef and pork, topped with mozzarella and provolone and sat in house-made marinara. The charcuterie board is chef-choice rather than a fixed set, which only works in a kitchen small enough to care what came in that week. Micro greens on the plates are locally farmed.
The pizzaiolo section is where the kitchen shows off quietly. Ai Cetriolini puts sliced dill pickles, beurre blanc, provolone, mozzarella and hardwood-smoked bacon on a pizza and dares you to doubt it. Braised Short Rib is a plated entrée wearing a crust. Margherita is left alone, because it should be.
Behind the bar the same logic applies. Craft cocktails are built with intent rather than poured from a gun, and the wine list is short and deliberate — Tuscany, Sonoma, Napa, Bordeaux, Argentina, New Zealand, Germany — in glass and bottle, so a table of two can order well without committing to a whole bottle.
The short menu keeps the room focused: pizza, antipasti, wine and cocktails, made for sitting down for a while.
Liberty Commons matters to the story. This corner of Akron, just above the Merriman Valley, has spent years as the place people pass through on the way to somewhere with a bigger sign. A fifty-five-seat restaurant only works here if the neighborhood decides it wants one, which means the regulars are not a marketing target — they are the entire business model.
That shows up in small ways. The menu is priced so a Tuesday dinner is a normal thing to do rather than an event. The wine list carries a ten-dollar glass as seriously as it carries the Caymus. Nobody is rushed off a table. Those are choices a small room can make and a hundred-and-eighty-seat one cannot.
The room is accepting applications. Anyone who wants to cook, pour or serve here can start on the careers page.
Ordering happens in the room, from the printed menu, with a server or at the bar — or online, through Toast for pickup or DoorDash for delivery. The kitchen makes each pizza to order, so the pacing of the evening is up to you — antipasti first is the usual way to do it.
Reservations are limited, which is what fifty-five seats buys you. Most people walk in. 234-272-3090 reaches the room if you have a question that the menu cannot answer.
The week is built in two halves. Monday to Thursday the room runs four until eleven, which is the version of the place that suits a long conversation. Friday starts at four and goes until midnight. Saturday starts at eleven in the morning and goes until midnight, and Sunday is eleven until nine — the slow one.
If you want to see the kitchen at full pitch, come at eight on a Saturday. If you want to hear the person across the table, come at five on a Tuesday.
